Cultivar or processing?
Sat down, had a coffee. First sip, loved it. Didn?t really know
what I was tasting. Want to understand. No one explained it.
Where does that flavor come from? My experience tells me that
these are very well-processed beans, chances are that many steps
have happened before reaching roasting and preparation.
Castillo, Geisha, Tabi; washed, honey, natural. Surely each
process has its own particularity. But at first glance, all these
processing decisions seem chaotic, with no apparent intention.
These coffees are merely expressions of concepts,
questions we ask ourselves and answers we
attempt to deliver.
